Icelandic Arctic Charr
Wild salmon isn't in season now, but Arctic Char or Charr is. We pick up our new grill tomorrow, so tonight's option was baking. This fish was delicious, with firm, pink flesh and a delicate, nuanced flavor. It's related to salmon. Our Arctic Char came from Iceland, but it comes from other places as well. Try some!
